Produced by Bekele Kachara at high elevation, the coffee benefits from slow cherry maturation and careful drying. Retaining a portion of the mucilage during processing reinforces sweetness while preserving separation between flavors, allowing the cup to stay focused as it cools. In the cup, honeyed sugar and concord grape lead, followed by apricot and bergamot-like citrus. Floral notes remain subtle, adding dimension without overt perfume.
