So würden wir den Mamy zubereiten Der Mamy Espresso benötigt einen relativ feinen Mahlgrad. Wenn ihr z.B. unseren Apas Espresso gewohnt seid, ist für den Mamy eine deutlich feinere Mahlgradeinstellung an eurer Mühle notwendig.  Warum schmeckt der Mamy so, wie er schmeckt? Der Kaffee ist sehr säurearm - einerseits, weil es ein 100%-Robusta Kaffee ist, andererseits, weil er auf etwa 600m.ü.M. angebaut wurde. Die sehr saubere Toffee-Note und die fast milden, klassischen Aromen von gerösteten Nüssen sowie etwas Holz kommen von der Varietät selbst, aber nur deswegen, weil der Kaffee außerordentlich präzise aussortiert wurde. Der Honey-Prozess, also die Fermentation mit der Mucilage um die Kaffeebohne herum, geben dem Kaffee die so weiche, fast buttrige Textur.  Erzähl mir mehr vom Mamy Espresso   Mamy Dioubaté ist ein Pionier. Der gebürtige Guineer hat in Deutschland promoviert und erst später seine ursprüngliche Heimat neu entdeckt. Die Region um Macenta hat ihn fasziniert. In der von der UNESCO geschützten Regenwaldregion um Macenta wird schon lange Kaffee angebaut, aber fehlender direkter Markzugang, mangelndes Feedback von Käufern und schlechtes Equipment machte die Kaffeeproduktion für die Menschen vor Ort nie wirklich attraktiv. Dabei sind die Konditionen vor Ort äusserst gut für hochwertigen Spezialitäten-, oder eben: Fine Robusta. Mamy und Relika widmen ihre Energie dem Aufbau dieses noch jungen Projekts und haben Großes vor. Warum haben wir den Mamy eingekauft?
