97%All profits on sales of our mission olives continue to be donated towards bushfire support and other community initiatives, on an ongoing basis. Indulge in the bold flavors of our Mission olives, a small variety with immense taste. These olives offer a delightful blend of fruity and nutty notes, boasting a depth and richness that sets them apart from our Verdale olives. Mission olives have secured their place as our personal favourites. Harvested when purple-black and naturally fermented for 12 months using just salt, spring water and time. We then hand grade and jar for your enjoyment. Like all our olives, they are estate produced and certified organic. Our table olive process in detail is as follows: Olives are picked and immediately placed into brine (spring water, Murray River salt). Nothing else is used or added for the curing process. Natural fermentation is allowed to progress for a minimum of 12 months, during which lactic acid naturally forms as a result of the process. Cured olives and hand graded and packed into jars. A fresh brine is prepared for packing, ensuring consistent shelf life. Our olives remain unpasteurized and rich in their natural goodness. It's important to note that lactic acid is commonly present in naturally fermented foods. Produced as a natural byproduct of fermentation, it's generated by specific bacteria like lactic acid bacteria and not only imparts the tangy taste to fermented foods but also acts as a natural preservative, extending their shelf life. This age-old fermentation technique is found in foods such as yogurt, sauerkraut, kimchi, pickles, sourdough bread, and, of course, olives. Olives with a Mission! All profits from our previous batches of Mission olives were donated to support Blaze Aid and local bushfire recovery efforts following the 2024 fires. Pat the chicken dry with paper towel. Rub all over with 2–3 tbsp Cobram Estate Ultra Premium Coratina Extra Virgin Olive Oil, season generously with salt and pepper, and place skin-side up in a roasting tray. Squeeze over half a lemon. Roast for 45–50 minutes, or until the skin is deep golden and the juices run clear (internal temp 75°C at the thickest part). Rest for 10 minutes before carving. Whilst the chicken is roasting, place the cut potatoes in a pot of salted water and boil for 12–15 minutes, or until just tender. Drain well, then return to the pot and gently shake/rough them up so the edges are fluffy. Spread onto a lined tray, drizzle with 2–3 tbsp Cobram Estate Ultra Premium Coratina Extra Virgin Olive Oil, season with flaky salt, and roast in the oven with the chicken 25–30 minutes until golden and crisp. In a mortar and pestle, pound the garlic, capers, and a pinch of salt into a rough paste. Add parsley and mint a handful at a time, bruising and grinding to release flavour. Stir through Dijon mustard, red wine vinegar, and slowly blend in the Cobram Estate Ultra Premium Coratina Extra Virgin Olive Oil, until it becomes a glossy, spoonable sauce. Taste and adju
