Production of the Sessantanni Primitivo di Manduria The grapes for this noble red wine come from 60-year-old vines. These roots are in barren, iron oxide-rich soils. This explains the name, as Sessantanni means "of sixty-year-olds". The result is, among other things, a very low yield. These gnarled old vines of the Primitivo variety produce only about 3000 kg of grapes per hectare per year. This naturally reduced yield also allows for particularly high quality and flavor of the individual grapes. The Scirocco, which blows in from North Africa, shapes the climate of Cantine San Marzano wines in southern Italy. It brings dry air, making it difficult for fungi, insects, and rot to infest the vines. This almost makes cultivation according to organic standards possible. About 80% of the must is kept on the skins for 18 days under temperature control. The remaining 20% of the Sessantanni Primitivo di Manduria for 25 days.
