Caturro Chiroso Caturro Chiroso is a rare mutation believed to descend from Caturro varietal mixed with older Ethiopian Typica-line genetics. It’s celebrated for its bright, candy-like sweetness, lifted florals, and tropical fruit character. In Huila, this variety consistently produces some of the region’s most aromatic and clean cup profiles. Process Anaerobic Semi-Washed [Begin] Floating process to select only fully ripe cherries. [80 hr] Anaerobic fermentation (whole cherry) in cans at 16–18°C. [25 hr] Oxidation in large tank. [pulped] Coffee is pulped (immediate). [12 hr] Mucilage oxidation. [36 hr] Submerged fermentation at 40°C; stirred occasionally for homogeneity. (~50% mucilage removed at this stage.) [432–576 hr] Parabolic drying for 18–24 days to 11% moisture, never exceeding 30°C.
