It’s what’s inside the cask that counts - but the cask itself does a lot of the talking. At Torabhaig, we talk about Smoke with Taste - a house style shaped not just by spirit and stills, but by the wood we choose to mature it in. In this blog, whisky writer Beth Whymark explores how our whisky maker, Neil Mathieson, and the team are using different casks to bring structure, texture and subtle complexity to each release - and how these quiet decisions are helping shape the future of Torabhaig whisky. While it’s not typically considered an ingredient of whisky (as barley, water and yeast are), casks make a significant contribution to them - in some cases, greater than the rest of the components combined. It’s estimated that anywhere from 50–80% of a whisky’s flavour comes from its cask. During ageing, they impart flavour compounds both from the wood itself and, if applicable, their previous contents. It’s not just about what you age in but where the casks are stored, with variables including temperature, humidity and warehousing style. For a young distillery like Torabhaig, ascertaining which casks best complement your spirit is an important step — and a pretty subjective one. Flavour will be a major factor in your choice of wood, but there are also impacts on structure and texture to consider. Torabhaig’s whisky maker, Neil Mathieson, tells me the distillery selects casks primarily for their assistance in structural development. The team are exploring a wide range but have been tentative in their fillings while they establish which casks work best, both for spirit quality and flavour. To date, they have favoured bourbon barrels — Neil feels that other seasoned casks can throw an “overcoat” of flavour on the spirit, making it harder to track how it’s ageing. “The American oak delivers the vanillins, eugenol [which adds clove notes] and fruity esters we want, and it adds a lighter spicy sweetness,” he says, adding that the barrels’ relatively small capacity (about 20
