ALBA is Zurich's first sourdough pizzeria. We don't follow the usual pizzeria rulebook: we source every ingredient directly, working closely with suppliers, and we're always experimenting with new techniques. In 2026, that earned us No. 43 on the Top 50 Pizzerias in the World list. Every pizza is thin, chewy, and baked fast, Neapolitan style, just 80 to 90 seconds at 430 degrees. The dough is made with Aulus, our 165-year-old sourdough starter (a natural yeast culture that has been kept alive and fed for generations), mixed from five different flours: two grown locally in Switzerland, three ancient grain varieties from Sicily. Hand-picked Sicilian tomatoes are used for the tomato sauce, and our mozzarella is made fresh to our own recipe with Latteria Sorrentina.
