Hoewel niet zeker is of de druif vernoemd is naar dit dorp of andersom, feit blijft dat de bakermat van de Chardonnay in de Bourgogne ligt. De Chardonnay vormt niet zonder reden de basis voor de meest vermaarde en dure wijnen uit deze regio, zoals de bekende wijnen uit Chablis, Meursault en Montrachet. Hier in het zuiden van de Bourgogne is de bodem wat rijker met meer klei en minder kalk. Voldoende snoeien is daarom essentieel om het concentraat in de druiven te behouden. Dat hadden ze bij de plaatselijke cooperatie niet helemaal begrepen en daarom begonnen Raphaël en zijn vader Gerard Sallet in 1994 hun eigen wijndomein. Een besluit waar ze tot op de dag van vandaag geen spijt van hebben. Hun wijnen blinken uit in zuiverheid en prijs-kwaliteit. Deze Mâcon-Chardonnay is een breed toegankelijke wijn die uitstekend combineert met wit vlees, gevogelte (kip, kalkoen), visgerechten met een licht crèmige (boter)saus, slakken en lichtromige kaas.
