Processing – Precision Meets Purpose The Aril lot exemplifies Iris Estate’s signature approach to processing – scientific precision with a deep respect for nature. Ripe cherries are harvested at 20–22° Brix, hand-sorted twice, and sealed in stainless tanks filled with carbon dioxide to eliminate oxygen. This controlled CM (Carbonic Maceration) fermentation encourages a gentle transformation, enhancing the coffee’s natural fruit sweetness and floral complexity. After fermentation, the cherries are pulped and washed, then dried for 20–25 days on multi-tiered raised beds inside a temperature- and humidity-controlled drying room. Every variable – airflow, heat, and timing – is adjusted to ensure an immaculate, refined flavour profile. Once dried, the beans rest in parchment within GrainPro bags, stabilising for perfect balance before export.
