In 2007, Aspen Restaurant and Bar opened in Old Saybrook and was named "Best New Restaurant" the following year. Aspen features contemporary American cuisine, crafted with sustainable ingredients and guided by the Farm to Chef Program, which connects Connecticut chefs with locally grown products.   In 2010, Charles was awarded the food service contract for Mystic Seaport, transforming a beloved community institution into a new concept—Latitude 41 Restaurant & Tavern, specializing in New American cuisine.   In 2021, The Coastal Gourmet Group opened its fourth Mystic Market Kitchen & Eatery at Foxwoods Resort & Casino. This newest location has elevated Foxwoods’ dining options with a focus on handmade artisan foods crafted from wholesome, locally sourced ingredients.
