WINEMAKING The Cinsaut grapes were machine-harvested at night at 22 °B. In the cellar, after cold-settling, the clean juice was inoculated with a specially cultivated wine yeast and cold-fermented in stainless steel tanks at 15 °Celsius. After fermentation, the wine is left on the fine lees for two months. FOOD PAIRING & SERVING SUGGESTION A perfect partner for salads, seafood and light meals in general.
