A staple in each community it serves, Mystic Market offers a wide variety of sandwiches, paninis, soups, salads, and an extensive selection of gourmet-to-go prepared meals. With an in-house bakery, each location proudly features a broad range of fresh pastries and desserts.   Building on the success of the markets, Charles launched Coastal Gourmet Catering, a full-service catering division with a liquor license. Known for its creative presentation, culinary excellence, and outstanding customer service, the catering team has earned a strong reputation throughout the region.   As the market and catering businesses thrived, the Coastal Gourmet Group expanded into the restaurant scene. In 2007, Aspen Restaurant and Bar opened in Old Saybrook and was named "Best New Restaurant" the following year. Aspen features contemporary American cuisine, crafted with sustainable ingredients and guided by the Farm to Chef Program, which connects Connecticut chefs with locally grown products.   In 2010, Charles was awarded the food service contract for Mystic Seaport, transforming a beloved community institution into a new concept—Latitude 41 Restaurant & Tavern, specializing in New American cuisine.   In 2021, The Coastal Gourmet Group opened its fourth Mystic Market Kitchen & Eatery at Foxwoods Resort & Casino. This newest location has elevated Foxwoods’ dining options with a focus on handmade artisan foods crafted from wholesome, locally sourced ingredients.
