Deze junmai ginjo wordt gemaakt van yamada nishiki-rijst uit het bergachtige noorden van Nagano. Het is hier wat koeler dan de rest van Nagano (en vergeleken met de rest van Japan), waardoor de rijst langer de nodig heeft om optimale rijp te worden. De hogere ligging zorgt ook voor een grotere UV-instraling, wat leidt tot een gezonde rijstkorrel en een zetmeelrijke kern (in het Japans shinpaku genoemd; 'wit hart').
