今回は自家製マヨネーズの作り方をご紹介します！ マヨネーズは実はご家庭でも意外と簡単に作れます。多少難しいところはありますが、丁寧に作れば失敗することはあまりないと思います。 マヨネーズを作る工程ではフレンチの基本的なテクニックを使うので、料理のスキルアップにも役に立つと思います！ 材料 卵黄 ・・・1個 オリーブオイル ・・・50ml サラダ油 ・・・150ml マスタード ・・・15ｇ 白ワインビネガー ・・・15ml 塩 ・・・適量 白胡椒 ・・・適量 作り方 まずオリーブオイルとサラダ油を混ぜておきます。 オリーブオイルだけで作ると、（オリーブオイルのモノにもよりますが）出来上がったマヨネーズが渋くなってしまうのでサラダ油とブレンドしておきます。 サラダ油のほかに、グレープシードオイルやひまわり油、高価ですがアマニ油などでも美味しくできます。それぞれ使う油によって香りが違うので、お好みの油で作るのもまた面白いかもしれません。 ボウルに卵黄とマスタードをボウルに入れてすり混ぜておきます。 片手で油を細く垂らしながらながらもう片方の手で混ぜ続けます。ボウルの下に濡れた布巾を敷いておくとボウルが動かなくて混ぜやすくなります。 難しければ油を少量加えて混ぜ、混ざったらその都度少しずつ油を加えて混ぜるを繰り返しても大丈夫です。 油を細く垂らしながら入れるのは乳化させるためです。一気に入れてしまうと上手く乳化できずに分離してしまうので、焦らず少しずつ混ぜ込んでいきましょう。 ⬆︎油を少しずつ加えながら混ぜていくと、写真のようにモッタリしてきます。こんな感じになってきたら乳化成功です。 全ての油を注ぎ終わったら、白ワインビネガーを2回に分けて加えます。ワインビネガーも一気に入れてしまうと、せっかく乳化していたものが分離してしまう可能性があるので気をつけましょう。 混ぜ合わせたら塩、白胡椒で味を調えて完成です！ マスタードの風味と白ワインビネガーの香りが、市販のものと一味違う絶品マヨネーズです！是非お試しください！
