The philosophy is to ferment only good quality of grapes. The tanks are filled by gravity without crush the fruit. Cold maceration of whole berries is performed from 5 to 7 days at 10-12 ºC. Alcohol fermentation with addition of selected yeast strains is controlled at 24-26 ºC during 5-10 days, followed by maceration from 10 to 14 days in concrete tanks. Malolactic fermentation continues in tanks, then ageing in French oak barrels: 10% - 12 months, 70% - 24 months, 20% - 36 months. YJ專業點評:呢套「20th Anniversary Cask Series」總共得1000套左右，仲未計有人會買走單枝，講真係少得可憐。4款加起來都唔夠1萬枝，我心入面第一句就係：真係夠晒勁😂 某啲品牌100週年、200週年嘅release多到完全見唔到底，可見有啲品牌真係用心做品牌，但有啲就純粹為咗賣貨。以Kilchoman之前嘅release嚟講，水準一直都好穩定，基本上冇乜商業化產品，包裝都冇換過咁滯。老板Anthony同佢個仔Peter真係用心經營嘅人，上外國網站睇睇，飲家多過炒家，一堆好評，口碑真係唔錯。Kilchoman 係蘇格蘭艾雷島（Islay）嘅一間酒廠，2005年創立，係島上124年嚟第一間新建嘅酒廠。佢哋以農場式釀酒（farm distillery）出名，由種大麥、地板發芽到現場蒸餾，全程一手包辦，堅持傳統工藝。佢哋嘅威士忌以濃郁嘅泥煤味同多樣嘅酒桶熟成聞名。20週年系列係為咗紀念酒廠過去20年嘅成就，揀咗一啲代表Kilchoman核心風格嘅酒桶，畀大家試到佢哋標誌性嘅味道。「20th Anniversary Cask Series」有四款限量單一麥芽威士忌，嚟自唔同熟成風格嘅酒桶，突顯Kilchoman喺波本桶（Ex-Bourbon）同雪莉桶（Ex-Sherry）熟成嘅功力14 Year Old Ex-Bourbon ($1499)年份：14年酒桶類型：Ex-Bourbon（波本桶）酒精度：51.2% vol.數量：5個酒桶（5 Casks）總瓶數：1,120瓶（1,120 Bottles）香氣（Nose）：清新同辛辣，帶濃烈嘅黑胡椒同豐富嘅乾果味。口感（Palate）：味道強烈，帶乾果同棗子嘅甜味，仲有黑朱古力同草本酒味，平衡得好好。餘韻（Finish）：長而濃郁，帶甜美嘅香料、豐富嘅BBQ肉味同細膩嘅泥煤煙燻味。
