This Cabernet Sauvignon has a wonderfully expressive varietal aroma while the blend of McLaren Vale and Coonawarra highlights the best aromas and flavours that Cabernet has to offer - peppermint, violets, chocolate, leather, black olive and menthol with oak influenced toasty vanilla. It is medium bodied with a generous mouth feel and a long finish.  Ideal with roasted or grilled lamb Geoff Merrill - Winemaker:  ‘Brick red colour. Clean Chocolate. Lifted Fruit, Some Leather. Primary Herbaceous Coonawarra fruit evident. Lifted cigar box palate acid balanced. Tannins in place. Very European. Great. Lively and crisp, this exclusive champagne is full-bodied with a velvety texture and aromas of wild strawberries.  Tasting Notes: A delicate, pale salmon pink colour with persistent and fine bubbles. A complex nose with hints of wild strawberries and redcurrant jam, followed by notes of candied fruits. Elegant and refined, this wine shows great minerality. Its soft and dry texture leads into a long finish indicative of berry fruit with a strong presence of red fruit.  Wine/Food Pairings: Reserved for the finest dishes: tempura of langoustine, roasted lobster and scallops with black truffle.
