Kagemitsu Sadamune Gyuto, 210 mmThis Japanese chef's knife has a core of Japanese Aogami # 2 carbon steel with a protective layer (Sanmai) on the outside. This double-sided sharpened knife has a black (Kurochi) protective layer. This knife is completely forged by hand in the Sadamune family forge in the small village of Tosa. The blade is very thin and sharpened manually and has no thickening which makes grinding very easy. This knife is not delivered razor sharp. If you want this knife to be delivered sharp, you can have the cut polished by us using the edge-polishing service.This blade is forged and sharpened by hand and may have some scratches or irregularities. The handle is made from walnut wood with a plastic bolster, the bolster might have some residual marks from the production process. Blade length: 210 mmTotal length: 360 mmWeight: 180 -190 gramSteel type: core steel: Japanese Aogami # 2 steel "Blue paper steel" (non-stainless) with 2 layers of softer steel on the outside and black Kurochi protective layer.Hardness: 61 + -1 (Rockwell C)Handle: Octagonal walnut wood with black plastic headThese knives are not rust resistant and are prone to oxidation, they will develop a patina over time, however this is easy to remove with a medium sanding pad and some steel polish.These knives are sharpened from the forge to about 2000 grit, making them sharp but not "razor sharp". If you want to have the blades polished, you can let us do this. Please add our "Edge-polishing service"  to your order and we will then polish the cut to 12,000 grit for a razor sharp result.Like all Japanese knives, the handmade Sadamune knives are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.There are no wooden sayas available for this knife.
