We have been making ice cream since 2015, and we still are. IceForm Pro is where we balance our own mixes, and where a recipe becomes a tech card, a label, a batch on the floor and a price you can defend. Before it we worked in spreadsheets, then in calculators that were always missing something. Once that cost us a whole batch. Every mistake we made since has left a limit or a warning somewhere in this app. BALANCING A recipe is a balance of fat, sugars, solids, water, sweetness and freezing behaviour. Change an amount and every indicator moves with it. When a batch will not come into range, one button works out the amounts that will, respecting what you lock and the limits you set. - The adaptive IceForm profile: MSNF, Sugars and Total Solids ranges follow the fat level you set, while POD and PAC balance independently. Every limit is yours to change. - 32 built-in profiles for specific product categories. Duplicate one or build your own. GANACHE A recipe type of its own: Aw, Brix, SFC at 20 and 28, pH, caramelisation and melting points, plastic range, shelf life, consistency, fatty-acid profile and cocoa components. WHAT YOU SEE Balance Radar, PAC and POD, MSNF, Hardening Factor, frozen water, overrun, Coldness Perception, a scoopability gauge and a freezing curve in Celsius or Fahrenheit. Evaporation and overrun simulation shows what they do to every number. INGREDIENTS 340+ curated ingredients, import from USDA FoodData Central by name or barcode, or your own through a guided composition editor. Cost and nutrition per 100 g and per serving, and a finished recipe can become an ingredient in another. THE DAY ON THE FLOOR Today opens on what is happening: what is in progress, what to make, what is in the way. A batch runs as a shift with timers and readings, and survives quitting. A recipe becomes products: pints, pans, cups, bars, each with its own pack, yield and price. Every finished lot carries the cost it was made at, and a lot that has to come off sale is followed to the tub and the slot it stands in. WHAT IT COSTS AND EARNS Three rungs, and the app works out which one your figures reach instead of letting you declare it: ingredients, plus overheads by the kilogram, plus hands and machine hours. A batch freezes its cost in layers the day it is made, so November's cream cannot rewrite October. Cost per litre, kilogram, scoop and piece on the real denominators. Price and margin by channel with the commission taken off first, break-even in portions a day, and the assortment split into stars, workhorses, puzzles and ballast. Eight reports, exported as a real spreadsheet. THE ASSISTANT Ask in plain words, in any language. It works your recipe through the tools you use, and the app does the calculating. It can draft a recipe, rebalance one you have, or fill an ingredient's composition from a name or a photo of its label. Bring your own provider: Apple Intelligence on device, Gemini, Claude or ChatGPT. Every change is yours to keep or undo. iPhone, iPad and Mac, with iCloud sync. SUBSCRIPTION Balancing is free. Without a subscription you get the sample recipe, fully editable, the full read-out on anything you build, and one recipe and three ingredients of your own. Pro adds the working tool: the ingredient library, USDA and barcode import, import and export, tech cards, the calculators and the assistant. Pro+ adds the business: stock and orders, production and finished goods, costing, prices and margins. If a subscription lapses, your recipes and ingredients stay readable in full; you just cannot edit or add. The Pro+ sections close with their data intact. PRIVACY Your recipes are yours. They stay on your device and, if you choose, in your own iCloud. We never see them and train nothing on them.
