<h1>山形の伝統野菜うこぎ菜 新梢(しんしょう)400g</h1> <img src="https://www.umaies.net/pic-labo/125-00100a2023.jpg" width="900" height="600" alt="山形の伝統野菜うこぎ菜400g" /> <h2>古くから米沢で食べられてきた「うこぎ菜」</h2> <p>「うこぎ」という植物をご存知ですか？うこぎは、山形県米沢市（よねざわし）を中心に古くから食べられてきた伝統野菜で、同じくうこぎ科のコシアブラを少し小さくしたような形をしています。朝鮮人参も同じくうこぎ科の植物です。漢字だと「五加木」と書きます。原産地は中国で、もともとは薬用として日本に持ち込まれたと言われており、「エゾうこぎ」や「ヒメうこぎ」などいくつかの品種がありますが、一般的に米沢で栽培されているのはヒメうこぎです。</p> <img src="https://www.umaies.net/pic-labo/125-00100b.jpg" width="900" height="600" class="half" alt="山形の伝統野菜うこぎ菜400g" /><img src="https://www.umaies.net/pic-labo/125-00100k.jpg" width="900" height="600" class="half" alt="山形の伝統野菜うこぎ菜400g" /> <h2>上杉鷹山がうこぎの垣根を推奨した歴史</h2> <p>米沢市におけるうこぎ栽培の歴史は、なんと戦国時代にまでさかのぼります。数年前に大河ドラマの舞台にもなった米沢藩の将軍「直江兼続公」がうこぎの栽培を始め、それをのちの米沢藩9代目藩主上杉鷹山が垣根として広めたといわれています。栽培を広めたきっかけは、うこぎを屋敷の垣根にすることでトゲにより敵の侵入を防ぐためだったそうです。さらに、春先にはその生垣から若芽を摘んで食用にしたといいますから、さすがは倹約を極めた上杉鷹山だなぁと感心してしまいます。米沢に残る武家屋敷には今でもうこぎの生垣があり、城下町の風物詩になっています。また食用としても、うこぎ料理は米沢には欠かせないものとなっています。</p> <h2>株式会社マインドのうこぎ菜</h2> <p>このうこぎな新梢を栽培しているのは、山形県米沢市にある株式会社マインドです。春から夏の時期にかけ、660坪（2,000平方メートル）もの広大な農園にてうこぎの栽培をおこなっています。</p> <p>栽培のこだわりは、化成肥料や農薬、殺虫剤などを使わないこと。平成13年から栽培を開始しましたが、平成15年からは化成肥料を鶏ふんに切り替え、一切の化成肥料は与えていません。こうする事で、苦味が少ないうこぎになるそうです。一般的にはアブラムシなどがつきやすいのですが、畑の畝（うね）の間隔を広くあけ風通しをよくすることで、薬剤などを使わない栽培を実現しています。また、もっとも手のかかる収穫についても、手間暇をかけて手摘みしています。田おこしから収穫まで、うこぎ栽培を一手に担う内藤さん（写真右）の、うこぎに対する深い情熱が伝わってきますね。</p> <img src="https://www.umaies.net/pic-labo/125-00100i.jpg" width="900" height="600" class="half" alt="山形の伝統野菜うこぎ菜400g" /><img src="https://www.umaies.net/pic-labo/125-00100j.jpg" width="900" height="600" class="half" alt="山形の伝統野菜うこぎ菜400g" /> <p&gt
